Christmas Keto Energy Balls

Need a little energy boost to get through the Christmas holiday season? Give these Christmas keto energy bites a whirl! These Christmas Keto Energy Balls are a guilt free indulgence this holiday season, a time of year that makes it so hard to stay on the healthy eating track.


HERE'S WHAT YOU NEED:

[8 Servings]

  • 1 cup chopped walnuts

  • 1 cup unsweetened shredded coconut

  • 2 tbsp coconut oil

  • 3 tbsp unsweetened cocoa powder

  • 1 tsp vanilla extract

  • 1/4 tsp peppermint extract

  • 1/8 tsp salt

  • 2 ounces Lily's Chocolate Chips

  • 1 sugar free candy cane


WHAT YOU NEED TO DO:

  1. Place the walnuts, shredded coconut, coconut oil in a food processor and pulse to form a chunky paste.

  2. Add the remaining ingredients to the food processor and pulse to form a thick dough.

  3. Scoop the dough into 1 inch balls, rolling each smooth with your hands.

  4. Place the rolled energy balls on a flat sheet tray then drizzle with the melted dark chocolate. Sprinkle the crushed candy cane over the balls.

  5. Let the chocolate harden and then enjoy!
