Peanut Butter & Coconut Energy Balls

Energy balls are such a great snack. They're full of nutrients, made with super foods and whole foods, high in protein, healthy carbs, fats, and fibre, which helps build lean muscle mass, boost energy and aid in weight maintenance. Essentially, they offer an energy hit and are perfect guilt-free snack. So, whip these babies up and take them on the go.

HERE'S WHAT YOU NEED:

1 cup (130g) pitted dates

3/4 cup (40g) ground almonds

1/2 cup (40g) desiccated coconut

2 tbsp chia seeds

1 tbsp coconut oil

1 tbsp peanut butter


Not a fan of peanut butter? You can swap it out for almond butter.


WHAT YOU NEED TO DO:

Place all ingredients in a food processor or high-speed blender and blitz into a paste.

Form walnut-sized balls by pressing the paste together with your hands. Place in the fridge for a few hours so that they become more solid.


Your guilt-free snack—or shall I just say treat because they're that good!—is ready to go when you are. Portion them out into snack size containers so you can grab-and-go quickly and easily.
